Step 1: Prep the Potatoes

  • Use russet potatoes for the best texture.
  • Cut into even strips and soak in cold water for 30 minutes to remove excess starch.
  • Pat dry completely before frying.

Step 2: First Fry (Low Heat)

  • Heat oil to 325°F (163°C).
